Brownies are not health food. Oh no, not by any standards. But these are moderately better, honest, brownies, at least compared to some out there. And they are delicious. This recipe is (barely) adapted from Smitten Kitchen.
85 grams bittersweet chocolate ( I used Whittaker's 72% Dark Ghana chocolate)
115 g butter
175 g sugar
1 tsp vanilla
1/4 tsp salt
2/3 cup flour
Preheat oven to 170°C.
Melt chocolate and butter together in a large bowl over a simmering pot of water (or in the microwave in 30 second bursts, stirring between each) until it is 90% melted; remove from heat and stir the mixture until it is smooth. Whisk in sugar and then eggs, one at a time, then vanilla. Add flour and salt together, stirring until just combined. Spread into a buttered baking pan about 20cm square, and bake for 25 minutes.
Cool in pan and cut when cold. Resist temptation and don't eat them straight away when they're still hot. They are so much better cold, even more so the next day, right out of the fridge.
