The rains have begun. It's not cold really, just a bit grey and wet. So I thought I'd do some baking and try to combine the best of New Zealand and Holland in one cake. Here's my Feijoa and Speculaas Cake recipe.
125g soft butter
1 cup sugar
1 tsp vanilla essence
1/2 cup milk
1 and 1/4 cups plain flour
2 tsp baking powder
1 1/2 tsp speculaas (having tasted it I would probably double this)
Up to 2 cups of peeled & halved Feijoa (cut each one in half then scoop them out with a spoon).
Combine the first 5 ingredients, then sift in the flour, baking powder and speculaas. Mix until well combined. Pour into baking paper lined 25x25cm deep cake tin. Push feijoa halves (pointed side) down into the cake mix until the top is kind of level. Sprinkle with the brown sugar. Bake at 180 degrees Celsius for 45 minutes (but check it earlier- because mine was a tad overdone).
Serve with a cup of tea.
