Little victories

It's nice to honour little victories. Mum made a banana cake to celebrate Max's one week birthday. I got 4 hours straight sleep. Toby has made one thousand cups of tea. These photos show some quiet moments in a whirlwind of stress, laughter, tiredness and love.

This is my favourite cake recipe.

Edmonds Banana cake

125g (4ozs) butter
2 Tablespoon boiling milk
175g (6ozs) sugar
1 teaspoon baking soda
2 eggs
1 teaspoon baking powder

2 large or 3 small mashed bananas
225g (8ozs) plain flour

Cream butter and sugar, add eggs, mashed bananas, then baking soda dissolved in boiling milk. Lastly add flour and baking powder previously mixed.
Bake in a ring tin for 25 minutes at 180C (350F).

Cream Cheese Icing
2 tablespoons butter, softened
1/4 cup cream cheese
1 cup icing sugar
1/2 teaspoon lemon zest
Beat butter and cream cheese until creamy. Mix in icing sugar and lemon zest, beating well to combine.
